Often times a child is more sensitive to food additives than adults. Known additives that cause rapid heart beat are MSG based products. Chances are the food contains it (not talking the chinese kind either). Here are the names that companies use: Autolyzed yeast, carragenan, Soy protein Isolate, Beef Broth, Chicken Broth, Natural Flavors (biggest one in USDA certified organic foods). http://www.msgmyth.com can find a lot more information.
I've suffered along with many people I've helped with rapid pulse. The symptoms should be highly apparent after eating (It will hit the brain in less than 30minutes, generally 5minutes in hyper sensitive kids). Mono sodium glutamate passes through the capillary barrier directly into the brain. Taurine levels in the brain begin to drop as glutamate levels rise above normal safe levels. Taurine is currently being used on ADHD and ADD children in studies as well. I've tried it and find it works for myself if I overdose.
I don't advocate removing foods from a child's diet such as going purely vegan. Deficiences in children can be dangerous and can hinder mental development. However there is no place for additives (especially the ones that look "natural").
Another way is to examine your son's eyes. Your eye contains millions of nerve endings. A map of the eye will reveal most health concerns. They are easy to spot as black dots. Google jensen iridology. You will get the usual quack watch stuff, but it works amazingly well. If you have ever broken a bone it will show up in your iris as a sharp cut. Maps of the eye will show where you cut it. It always matches.
Chances are if there were no mineral deficiences during birth, foods have done this. A baby's immune system is much strong then an adult's.
