Wow, I would love to use some of my grains to make fizzy fruit drinks.  Are there any specific instructions/ recipes I should follow with the crossover?

I started with recipes from http://users.chariot.net.au/~dna/kefirpage.html
scroll down to where water kefir bit starts.

For my ginger i use, for every 500ml of water, 2.5 tbs unrefined suger, the juice of one large or medium lemon to taste, cut fresh ginger root a level tbs and a half to a quarter of teaspoon of dried ginger root powder.
Ferments for 2 days at room temp then bottled for a day.

Similar for the friut ones but just add your favourite fruits either chopped up, juiced or whatever but you may not need so much sugar depending on the sweetness and quantity of fruit put in.

Seems a good way to take herbal tonics too.

Starcat, I've just been feeding my grains with regular milk from Braum's.  If I had access to raw dairy, that would be the way to go, but I don't.    Is that what you mean by what I'm doing with them?

Its great stuff Lono i love it, i stopped using milk with mine as i have concerns about too much bovine dairy (though goats milk is probaly a lot healthier than cows which i will get round to making again ) and now mainly make Ginger Beer and fermented fruit drinks. It really gets fizzy if stored in cork sealed bottle for a day and gets drier to turn more sugar into goodies.
You can use the regular milk grains for the water and sugar based drinks as they will swap over but you have ferment for longer the first time then you have water kefir grains, a good way to use some of your spare.
I use the high content mollases unrefined sugar to put some good organic trace elements in there like iron and calcium.

I noticed the kefir reproduces much slower using the water based kefir and  another day to ferment but its worth it and fun to experiment.
